Ingredients
2 large baking potatoes, thinly sliced
1 medium onion, thinly sliced
2 cloves garlic, minced
1 c reduced-sodium beef broth
Directions
- Preheat oven to 400 degrees, coat an 8 x 8-inch baking dish with nonstick cooking spray
- Layer potatoes in prepared dish, in an overlapping fashion, alternating with onion slices. Sprinkle with garlic and spoon 1 cup of broth over the top. Season with 1/4 teaspoon each of salt and pepper. Cover with foil and bake at 400 degrees for 40 minutes. Uncover and bake 20 minutes or until potatoes are tender. Keep warm.

6 Yukon gold potatoes
6 red russet potatoes
1 baking potato
1/2 c sour cream
1/2 c buttermilk
1 tsp freshly ground pepper

- Clean potatoes very well, and place them in a pot of boiling water (you can skin the potatoes or leave the skins on; I always leave the skins on the potatoes as it gives additional texture, and the majority of the nutrients are found in the skin). Allow the potatoes to boil until completely softened.
- Place all ingredients into a large mixing bowl, add the potatoes; mix with mixer speed at low to medium speed until all ingredients are well-blended and potatoes are the consistency you are looking for.
- As you are mixing your potatoes, add more ingredients as you see fit. I find that I almost always need to add a little more sour cream, season salt, or garlic to my potatoes, and the only true way to find out is to taste test!

12 oz cranberries
1 c white sugar
1 c orange juice
Directions
In a medium saucepan, melt the sugar in the orange juice over medium heat. Once the sugar is melted, add the cranberries and allow to cook until the cranberries begin to 'pop' (about ten minutes). Remove the sauce from heat and pour into a bowl. The sauce will thicken as it cools.

40 oz canned yams, drained
1/2 c chopped pecans (I usually candy my pecans first for additional flavoring)
1/2 c firmly packed brown sugar
1/4 c flour
1/4 c melted butter
1 bag small marshmallows (optional)

- Preheat oven to 350 degrees. Place yams in a baking dish.
- In a separate bowl, combine the pecans, brown sugar, flour, and melted butter together and blend well.
- Sprinkle mixture on top of yams. Bake yams in preheated oven for 35-40 minutes.
- If you want to add a few marshmallows on top of the mixture as well, it adds a nice flavor and a hint of tradition. I have tried both ways and like them both ways, but prefer these yams sans the 'mallows)
***I have also used regular yams, and simply cut them into cubes, and added a 1/4 c of water to the yams in the baking dish, this recipe tastes great both ways.***

2 c uncooked elbow noodles
3/4 lb Velveeta cheese
1/3 c milk
1/2 c plain crumbs
Directions
- Cook elbow noodles as directed on package, drain well, and return to saucepan.
- While keeping the stove on low heat, add the Velveeta cheese and milk and mix well.
- Once everything has been well mixed, you can either serve and enjoy OR transfer the macaroni and cheese mixture into an 8 x 8 baking dish, sprinkle the mixture with the bread crumbs and broil for 3-5 minutes, or until topping is just golden brown.
***You can use non-fat or reduced fat buttermilk in place of the milk for a thicker, creamer flavor***

1 bunch of asparagus
2 tbsp butter
1 tsp balsamic vinegar
1 tbsp light sodium soy sauce
salt and pepper to taste
olive oil

- Preheat oven to 400 degrees. Arrange asparagus on a baking sheet.
- Drizzle with olive oil and a dash of salt and pepper. Bake asparagus in preheated oven for 12 minutes, until tender.
- While asparagus is in oven, in a saucepan, melt the butter, then stir in balsamic vinegar and soy sauce. Once asparagus is out of the oven, drizzle asparagus with sauce and enjoy.
***I have also added sesame seeds to the sauce for a little flare, which is also great, especially with salmon or halibut. This is a great sauce to put on top of any fish.***
