Pumpkin Spice Muffins

Ingredients
2 c flour
2/3 c packed brown sugar
1/4 c chopped walnuts
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves
1 c canned pumpkin
1/3 c unsweetened applesauce
1/3 c olive oil
1/3 c low fat buttermilk
2 lrg eggs
1 tsp vanilla


Directions
  • Preheat oven to 400 degrees.  Spray 12-cup muffing pan with cooking spray.  In a large bowl, combine the dry ingredients, including the spices.  Stir well to combine everything.
  • In another bowl, combine the pumpkin, applesauce, olive oil, buttermilk, eggs, and vanilla; mix well.  Pour the liquid mixture into the dry ingredients and stir.
  • Divide among the 12 muffin cups.  Bake for 20 minutes or until toothpick comes out clean.

Hubby Rating: 10!  He loves these! They are so easy to make, are wonderful during the fall and winter months, especially for a quick breakfast during the work week, and the best part is that they are healthy for you!  If you want to up the health factor, just switch out the regular flour for whole-wheat pastry flour instead. I suggest starting with 1/2 and 1/2 so the difference of taste from the flour isn't so drastic.  Hope you enjoy!
