Summer Citrus Salmon

Ingredients
2 tbsp olive oil
2 tsp lemon juice
2 cloves garlic
2 tsp fresh ground pepper
1/2 tsp kosher salt
1/4 tsp onion powder
2 tsp lime juice
3 tbsp olive oil
2 lbs fresh fish
mango salsa*

Directions

  • Whisk first three ingredients together and pour over fish in gallon ziplock bag.  Put in refrigerator and allow to marinate for at least 3 hours.
  • combine the remaining ingredients and create a rub.  Once fish has marinated, place rub on fish, put on baking sheet and place in oven at 350 degrees for 30 minutes.
  • While you are waiting for the fish to cook, I usually make my mango salsa from scratch using a ripe mango, a red, yellow, and orange bell pepper, red onion, and a lime.
***Serve with brown rice and roasted vegetables***

Hubby Rating: 10!  We eat a lot of fish since we go to Alaska and catch our own, so I am constantly looking for new ways to prepare Alaskan caught salmon and Halibut!  However this recipe tastes great on any fish!
